Thanks to the hot and dry summer, the unilateral foliage peeling, done in the next stage, to avoid burns on the grape, we were able to create a balance between the photosynthesizing leaf surface and the fruit. We have thus achieved the complex goal of reaching maturity without losing acidity. Right now the wine has a complex and harmonious structure that the old Capestrano vineyards never had, certainly the result of the excellent vintage but perhaps also of a little experience, which has allowed us to understand and enhance it.
